You might already know this Reader, but my husband is Irish and I'm Italian. A combination that my side of the family eventually embraced - 💚 😉
So today we celebrate the cornerstone of Irish cuisine...the potato with 3 recipes...one mashed, one halved and one main (even though the last one is Italian).

My MIL's Foolproof Potatoes

I'd be remiss if I didn't share my grandmas Nina's homemade potato gnocchi. For her "real" recipe, use some of the leftover mashed potatoes above instead of my baked potato version. She always had a way to use up every bit of every leftover!
If sweet potatoes are more your thing, I have a sweet and slightly spicy version using the same technique above.
For the creamiest, lump-free mashed potatoes, use a potato ricer - look for a large basket. You won't believe the difference it will make!
