What I'm cooking these summer days

Summer pasta doesn't need to be complicated. It needs to be good enough that you make it on a Tuesday without thinking twice about it.

These three are in heavy rotation at my house right now. All weeknight-friendly, all the kind of thing that makes you feel like you actually cooked even when you didn't try that hard.

Baked goat cheese pasta with cherry tomatoes — the tomatoes and garlic roast down into a caramelized sauce while the goat cheese melts into everything. The oven does all the work in under 30 minutes.

Caramelized zucchini pasta with lemon and ricotta — The secret to this one is not rushing the zucchini. Let it cook down low and slow until it's almost jammy.

Slow-roasted Campari tomato pesto pasta — peak summer in a bowl. Make this one when the tomatoes are actually good.
