My favorite way to roast sweet potatoes

Hi there, Reader,
I was walking down our main street here in town and saw a store with a sweater in the window that said "coffee weather". Maybe this is just me but I don't need my sweater to tell me it's Fall; the PSL in my hand and the leaves on my driveway tell me just fine.
Oh and the sweet potatoes and butternut squash in the grocery bins. I see those and I immediately want to make a big sheet pan of my super easy, crispiest sweet potato halves.
It's either those or my delicata squash rings. They're not only a pretty side dish but have incredible flavor!
