We are into Memorial Day weekend and I have one strong opinion: whoever brings ice cream cake has the best job.
No standing over a hot stove. No timing anything. I make it Friday, put it in the freezer, and pull it out before we are walking out the door. Pretty darn simple!
I've been making ice cream cakes for years and I'm convinced they're one of the most underrated things you can bring to a party.
My amaretti ice cream cake is a special one I came up with when I wanted something extra that wasn't chocolate. The amaretti cookies give it this delicate almond flavor that makes it feel more grown-up than your average ice cream dessert. And the cookie butter? 💋
And if you're feeding a crowd — especially one that includes kids — mint chip ice cream cake is the one. Party size, completely make-ahead, this is my mom's recipe tweaked a bit with lots of options. I love options!
