๐Ÿƒdipping my toes into Fall


School's back!

Hi there, Reader,

I have one foot in post-wedding happy, half a foot in a let's-go-to-the-pool mindset and the last half in "wait, you want to talk holidays...already?"

Given that I'm not quite in a holiday vibe just yet, I'll worry about the immediate needs of those around me who need to be fed now.

So...here are 6 meals you can make over the next two weeks. I'm going with 6 because they each make leftovers and I'm guessing you might be like me and not have the time nor the inclination to cook every night.

  1. โ€‹One pan rigatoni. The whole thing cooks in 30 minutes in yep, ONE PAN. Add some of this unbelievably moist chicken and you've got a meal they'll be wolfing down.
  2. โ€‹Handheld pizza. Otherwise known as "how to make the carpool jealous". Make a bunch and pop them in the freezer. Bake one off and hand it to them as they head out the door.
  3. On Sunday, cook up some super crispy chicken cutlets and then turn them into this better than fast food chicken sandwich.
  4. If your are anything like mine, they'll love this super simple spicy pasta. [p.s. save some sauce for the sandwich above].
  5. Use all that peak summer basil to make big batches of homemade pesto. Spread it in mayo for the best chicken sandwich, mix into a creamy dressing or toss into pasta.

Ok...I lied. That's more than 6 recipes.

Testing a few fall one pan pastas, publishing an unbelievably easy and so good kale salad, and finally finally getting up that sausage ravioli recipe in time for the holidays. It's so flavorful!
