🥘 Dinner that holds the house together

Lately I’ve been thinking a lot about how different dinner looks at my empty nester stage of life.

Some nights we're not that hungry.
Other nights someone is starving.
Schedules don’t line up. Appetites don’t match.
And I still don’t want to spend the night washing dishes.

What do I want? Dinner that feels like care, not obligation.
Food that has us lingering a bit without taking the whole night with it.

This week, I’m leaning hard into one-pan dinners. And boy, am I happy when it's time to clean-up.

Here are a few one-pan favorites to get the week started:

Weeknight meatballs
Non-Italian meatballs that are weeknight-friendly. Serve with rice, noodles, or just vegetables — everyone eats what they want without a second dinner.

Fish Taco Seasoning
Skip the seasoning packet and raid the pantry to season fish, shrimp, or even vegetables, saute everything on one pan and serve with your favorite rice (sorry...that's two pans!).

Cheesy Italian Sausage Tortellini Skillet
Brand new and so easy. Pull out that cheese tortellini you might have earmarked for "someday".
