Hello Reader!
I write this as the snow falls —our first "big" snow and boy was it ever! About 10" on the ground and possibly a couple more on the way. While I've lived in the Midwest now for the majority of my life, the California girl in me still has to mentally gear up for ❄️. I have to admit...it is beautiful!
And just like that...
It's Christmas! I asked some friends today what this weekend brings for them and the answers were around Cyber Monday and thoughts of baking. Oh..and leftovers...what to do with all the leftovers. Working backwards...
🦃 Leftovers
Turkey. I'll say it again..this simple turkey soup is light and so good.
Mashed Potatoes. Lindsay from Pinch of Yum had a genius idea. Take a piece of parchment paper and measure the diameter of pot you'd use to make stew or soup. Spread mashed potatoes on the parchment inside the circle in a thin layer. Top with another piece of parchment and repeat until all potatoes are used and freeze. Next time you make stew, pop one out and place on top of the stew with the lid on to reheat for a pseudo shepherd's pie. Love this!
Stuffing. I've been making stuffing sandwiches since I was a kid. The toaster idea just came to me today actually! Watch how...

I'll be sharing our favorite Christmas cookies over the next few weeks but one that deserves some extra love are these Italian almond cookies. They have the most amazing chewy texture. Everyone who eats them wants the recipe. Make them a part of your tradition!
